Universidade do Rio Grande, Brazil, Facultade de Farmacia AbstractThe genus Ilex (Aquifoliaceae) consists of over 400 species, which grow as trees or shrubs and distributed in Central and South America and Asia. In Brazil and Paraquay, Ilex paraguariensis is cultivated for the preparation of mild stimulant beverage called mate made by infusion of the dried leaves. There are several indigenous Ilex species that have been reported as adulteration or substitute for the genuine mate product. The structure of five triterpenoid saponins (mutesaponins 1-5) isolated from Ilex paraguariensis is reported. Structural elucidation was performed using mass spectrometry and NMR techniques.
